Red Bell Peppers
What do you know about the red bell pepper? Some of you may think, “Well, its red, it’s a pepper, yep, that about sums it up.” Good answers, but did you know that red bell peppers have 3 times more vitamin C than citrus fruits? Me neither! Betcha didn’t know that red peppers are actually green bell peppers that have matured. Cool, huh?! I thought so.
I grew up enjoying green bell peppers. It was the only pepper my mom used when cooking. Only recently have I started to use red bell peppers in my cooking, and I love them. They are so sweet, plus, they add color to salads and other recipes. Now knowing they are so rich in vitamin C, red peppers will be a must have staple in my kitchen.
